This Healing Honey Toasted Apple Cinnamon Granola may seem like it’s difficult to make, but I promise it’s easy as can be and comes out nice, sweet and crunchy! This recipe is part of a fun, cancer-prevention series I’m doing in partnership with Wendy Walk. You can easily sprinkle this granola over any yogurt, serve it in a bowl with almond milk or eat it on its own. Just be careful, it’s addictive.

Wendy Walk is an organization that was founded to support Wendy in her battle with Liposarcoma. Her three children began this organization by raising funds and awareness for Sarcoma through events around the country. The events have inspired thousands, including me, which led me to partner with them to help get the word out there. Wendy Walk has a strong focus on staying active and positive, and always remembering Wendy’s motto: “I am not my scans.” While granola may not be the first thing you think of when you think of cancer prevention, I’ve spiffed this one up with some antioxidant-rich, cancer-fighting superfoods.

• Honey aids in creating an anti-inflammatory pathway while modulating the body’s immune system.
• Almonds have an alkalizing effect, which helps create a disease-free environment and supplement the body with vitamin E, calcium, potassium, phosphorus, iron and magnesium.
• Cinnamon spice has been found to inhibit cancer cell proliferation, or multiplying, in some types of cancer.

HEALING HONEY TOASTED APPLE CINNAMON GRANOLA

Serves: 6-8 servings

INGREDIENTS

3 cups gluten-free rolled oats
1 cup sliced almonds
3/4 cup unsweetened applesauce
1/3 cup honey
1 tablespoon cinnamon
1 teaspoon vanilla extract
pinch of salt
1 cup dried apple rings, chopped
1/2 cup melted coconut oil, optional

INSTRUCTIONS

1. Preheat the oven to 325 F and line a baking sheet with parchment paper.

2. In a large bowl place the oats and almonds. In a separate bowl add applesauce, honey, cinnamon, vanilla and salt. If you’re using coconut oil for a nuttier flavor, add it now. Mix and then pour the wet mixture into the dry ingredients. Stir until all of the oats are coated.

3. Spread the oats onto the parchment paper, in a flat layer, and bake until oats turn golden brown, about 40 minutes. Check the oats halfway through the cooking time and stir them around. The granola won’t be 100 percent crunchy when you first take it out of the oven, so let it cool to get crispy. Mix in dried apple rings.

(Store in an airtight container for up to three weeks.)
